Cream of Broccoli Cheese Soup

INGREDIENTS

  • 2/3 cup chopped onion
  • 1 tablespoon margarine
  • 5 cups chicken broth
  • 1 (8 ounce) package wide egg noodles
  • 1 (10 ounce) package frozen chopped broccoli
  • 1 minced garlic,
  • 6 cups milk
  • 12 ounces shredded American cheese

DIRECTIONS

1.  In a large saucepan, sauté onion and garlic in butter or margarine over medium heat till tender.

2. Add broth, and bring to a boil. Reduce heat, and add noodles. Cook for 3 to 4 minutes. Stir in broccoli. Cover, and cook for 5 minutes.

3. Stir in milk and cheese. Heat slowly, stirring, till cheese melts. DO NOT BOIL. Serve immediately.


Boiled Mashed Potatoes

Ingredients

  • 2-3 large Potatoes Chopped (with skin on)
  • Pot of boiling water
  • Smart Balance margarine
  • 2 Tablespoons Mrs. Dash All Purpose Seasoning (optional)

DIRECTIONS

1.  Place the potatoes in a large pot of boiling water

2. After potatoes soften drain the water and add margarine

3. Serve warm or cold.


Cheesy Mashed Potatoes

Ingredients

  • 2-3 large Potatoes Chopped (with skin on)
  • Pot of boiling water
  • Smart Balance margarine
  • ½ Package Kraft Shredded Cheddar cheese
  • ½ Cup milk (cow, rice or soy)
  • 2 Tablespoons Mrs. Dash All Purpose Seasoning (optional)

DIRECTIONS

1.  Place the potatoes in a large pot of boiling water

2. After potatoes soften drain the water and add margarine, milk and cheese

3. Stir leaving some chunks add Mrs. Dash for taste

4. Best served warm.


Eggplant Sandwiches

Instructions

  • 1 large eggplant
  • Mrs. Birds Double Fiber Wheat Bread (5 grams fiber Per Slice!!!)
  • 1 Slices of cheese per sandwich
  • 2 Large Tomatoes Sliced

Directions

1. Carefully slice the eggplant ¾ of an inch thick

2. Place 3 to 4 pieces of eggplant on the George Forman Grill. Heat until soft. Remove and put on a separate dish - repeat until all of the eggplant is heated

3. Stack 2 pieces of bread on the grill and close for 30 seconds to toast

4. Open the grill and place eggplant, cheese and tomato between the sandwich bread

5. Heat until cheese is melted- Yummy!!

 

Tabi’s Spaghetti Squash

Instructions

  • 1 large Spaghetti Squash
  • Liquid Aminos (low sodium)

Directions

1.  In a baking dish, pour 2 inches of water

2. Slice the squash in half long ways.

3. Place the squash seeds facing down in a 375 degree oven for 1hour

4. Remove the seeds and fork out the spaghetti

5. Pour Liquid Aminos on the spaghetti to taste


Tabi’s Chicken-In-a-Pot

Ingredients:

  • 3 limes
  • 1 lemon
  • 1 whole garlic clove peeled
  • 3- 5 large carrots
  • Whole roasting chicken (pull out the insides)
  • Season to taste with Mrs. Dash

Instructions:

  1. Put pepper all over chicken until it almost looks black
  2. Slice 2 limes and ½ lemon and garlic and put into crock pot
  3. Put the chicken into the crock pot breast up
  4. Place the rest of the lime and lemon on top
  5. Cut carrots and put them around the sides as desired
  6. Cook on low for about 8 hours on high for about 4hours.

Antioxidant Powered Beef Stew

Ingredients

  • 4 Jalapenos
  • 1 Can Pineapple slices
  • 1 whole Red onion
  • 1-Bell Pepper
  • 4 New Potatoes
  • 5 Carrots
  • Fresh Garlic

Instructions

  1. Place ½ of the pineapples, jalapenos, red onion and garlic at the bottom of the crock pot
  2. Place the beef on top of the thin layer
  3. Stuff the new potatoes and carrots around the walls of the crock-pot
  4. Place the rest of the fruit and vegetables on top
  5. Cover and cook for 8 hours on low for best results.

Fish-in-a-Pot: Catch ‘em While Their Hot

  1. Bottom Layer:
    1. Carrots and onions
  2. Middle Layer;
    1. Mustard greens, Collard Greens, and Spinach
  3. Next Layer: 
    1. Filet of Salmon with Lemons on top

Instructions

  • With hands rinse the Greens and vegetables and place ingredients in the appropriate layer in the crock-pot
  • Let this one cook for 6-7 hours on low
  • Enjoy the salmon and vegetables together… Yummy!

Tabi’s 7 Layer Stew

Ingredients

  • 4 CUPS Boiled potatoes (boiled in 1 tablespoon of sea salt)
  • 1 Cubed Eggplant
  • 1 whole Red onion
  • Small package Frozen Broccoli
  • Small package Frozen Brussel sprouts
  • 16oz can Low Sodium tomatoes
  • 16 oz can Organic Tomato Soup

Instructions

  1. Place all of the ingredients into a large pot
  2. Begin to stir when tomato soup begins to boil
  3. Serve warm with Crackers or bread.

Tabi’s Greens Blend

Ingredients

  • 1 Bunch of Mustard Greens
  • 1 Bunch of Collard Greens
  • 2 large Red Tomatoes
  • 1 Red Onion
  • Garlic
  • Almonds and walnuts
  • Mrs. Dash herbal blend

Instructions

  1. Clean the greens From dirt and bugs (takes about 5 min)
  2. Place almonds and walnuts, garlic and onions, and greens in a large pot on the stove.
  3. Pour about ½ cup of water in the pot and cover

Tabi’s Garden Blend (Vegetarian)

Ingredients:

  • Fresh Kale greens Bunch
  • Fresh Spinach Bunch
  • 2 Very ripe tomatoes or 1 can of diced tomatoes
  • 2 Zucchini
  • 2 Squash
  • 6 large Carrots (Chopped into circles about ¼ inch thick)
  • High antioxidant Red Onions
  • Garlic
  • Mrs. Dash Herb Seasoning
  • Smart Balance with Flax Seed

Instructions

  1. Just clean vegetables, slice and dice the way you want.
  2. In a pot or heating pan, sauté onion and garlic in Smart Balance for 2min
  3. Add the rest of the vegetables (if using canned tomatoes put them on top)
  4. Sprinkle some Mrs. Dash on top
  5. Add 2 tablespoons to Smart-balance while heating
  6. It is done when the Zucchini and Squash are at the desired taste.
  7. Tasty when warm, but can be served cold.

How to make Baked Potatoes in the Microwave??

Simply place the potato on a microwave safe dish. Poke with a fork in several places. Place in the microwave on high for 5-6 min staying close by. This recipe is a great way to cook classic Russet potatoes or even sweet potatoes. Potato is very hot so be careful when eating.


Teriyaki Chicken and Rice

Need:

  • Boneless Chicken Breast
  • Almonds
  • Honey
  • Flax Seed, Garlic and onions (jalapeño peppers as desired)

Directions

  1. Slice chicken breast into desired texture
  2. Put flax seed, garlic, onion, jalapeño, honey and Liquid Aminos into a Ziploc bag with chicken. Shake very well for 3 minutes.
  3. In a stainless steel pan- grill chicken breast in until cooked well done.

Zesty Cheese Burgers

Ingredients
  • Lean ground beef or turkey
  • Mrs. Dash Seasoning
  • Cheese –(Cow, Goat, Soy, or Rice Cheese)
  • Whole Wheat buns

Instructions:

  1. Shape meat into patties ½ inch thick and about 3 inches in diameter
  2. Cook meat on hot skillet or grill on both sides until done. About 3 minutes each side.
  3. Place buns on the grill with the meat and cheese on top and let the cheese melt
  4. Serve with Tomatoes, Onions, Lettuce and Pickles for a great treat.

Tabi’s 3 Bean Veggie Patties

Ingredients


  • 1 Package of Soft Tofu
  • 1 Package of Cream Cheese
  • 3-4 eggs
  • 1cup Salsa
  • 1½ cup Dry Oat Meal
  • 1 cup Cooked Brown Rice
  • 1 can black beans
  • 1 can kidney beans
  • 1 can black-eyed peas
  • Smart Balance or Enova oil

Instructions

  1. Put all of the ingredients into a large bowl and mash together with a “potato masher”. Try to mash all of the beans into small pieces. Takes about 5 min.
  2. In a large pan, heat oil (1/4Th of an inch deep) until hot.
  3. Using a spoon as a gage, scoop patties into the pot of oil for
  4. Cook on one side for 5 min
  5. Then, flip to the other side; press down with spatula, and to cook for 1 min.
  6. These taste wonderful!! Eat them just like regular burgers.

Strawberry Banana Smoothies

Ingredients

  • Silk Fiber-Plus
  • ½ a bunch of Strawberries
  • 2 bananas
  • ¼ cup Flax Seed meal
  • Ice (optional)

Directions:

Blend ingredients in a blender for 2-3 minutes. Enjoy!!

(Note: To maintain color, add a lemon juice to leftovers.)

 

Mixed Berries Protein Shake

Ingredients

1 ½ Cup Mixed Berries

8oz Hemp Milk

8oz Aloe Vera Juice

2 Scoops Vanilla Rice Protein Powder

Directions:

Mix in blender and serve chilled
